A minor would give you a lot of freedom - what do you think you'd want to switch your major to?
In terms of the letter of rec, just write one stating her strengths/why she should be granted tenure addressed to "Dear Tenure Selection Committee", signing it in ink may look more official but I'm sure emailing it her is fine.
I wonder if our Prof today was curious about our talk after class... I felt a little self-conscious yet also like "SEE?? SHE SHOULD HAVE TENURE!" :)
